Spinach & Cheese Quiche
Easy Weekend Breakfast

Quiche is one of the best breakfast/brunch meals you can eat & it's soo simple to make. The basics of quiche are eggs, cream & cheese. Once you have your custard down you can add any filling you want. Meats, veggies, different cheeses, the possibilities are endless. Once you try this recipe you'll keep a frozen pie crust handy in your freezer. This is also a great way to use frozen veggies you have on hand or veggies getting ready to go bad in the fridge!
Tools:
-Mixing bowl
-Rubber spatula
-Whisk
Ingredients:
-One pie crust (store bought or homemade is fine)
-4 eggs
-1 cup of heavy whipping cream
-3 cups of fresh or frozen Spinach chopped
-1 1/2 cup of shredded cheese I used Italian blend cheese & white cheddar
-2 Green onions chopped with whites separated from the green
-1/4 of a medium white onion finely chopped
-1/4 of a green bell pepper finely chopped
-Seasonings of your choice
Directions:
- Pre-heat oven to 350°
- Bake pie crust for 15 min then set aside to cool
- In a mixing bowl crack 4 eggs and whisk in cream. Add seasonings of your choice, mix & set aside
- In a medium pan add olive oil & sauté onion, bell pepper, & white of your green onion until they start to become translucent.
- Add spinach to pan & cook until it begins to wilt. Set mixture aside to cool.
- To the bottom of pie crust add a handful of cheese to cover bottom
- Add spinach mixture to crust then top with remaining cheese
- Pour egg mixture over everything & bake for 45-55 minutes or until the centre of the quiche is set
Serve warm & top with greens of green onion for garnish
