Chicken Cordon Bleu

Stuffed with Delicious Goodness!

Tools:
- Meat Mallet
- Deep fryer or skillet
- Tooth picks
- 2 wide bowls or pans
- Vegetable oil (or any deep frying oil)
- Wire rack
Ingredients:
- 2-3 chicken breast cut into 6 cutlets
- 6 slices of deli ham (I used turkey ham)
- 6 slices of Swiss cheese
- 1/2 block of Monterey cheese cut into 6 logs
- 2 eggs
- 1/2 cup of unseasoned breadcrumbs
- 1/2 cup of panko breadcrumbs
- Seasonings of your choice
Directions:
- Prep chicken breast by slicing into cutlets & using a mallet to make them nice & thin. Season chicken on both sides.
- Add ham on top, then Swiss cheese, followed by log of Monterey cheese.
- Roll chicken breast tightly starting from the widest part down to the tip. Use toothpicks as needed to secure them. Place in freezer to firm up.
- Make dredge station: one bowl with 2 beaten eggs. Another with breadcrumbs.
- Take chicken from freezer & roll in eggs, then into breadcrumbs making sure to press breadcrumbs into the chicken.
- Heat skillet with oil & fry the chicken until golden brown. You could also bake the cordon bleu.
- Remove chicken from pan & drain on a wire rack.
- Serve with sides of your choice!
