Slow Cooker White Bean Chicken Chili

Somewhere between soup & stew

Tools:
- Slow cooker
- Large frying pan
- Mixing bowl
Ingredients:
- 2 chicken breast
- 32 oz of chicken broth
- 1 can on cannellini beans
- 1 can of navy beans
- 1 cup of corn (I use frozen but canned or fresh is fine as well)
- Half of a yellow onion diced small
- 4 cloves of garlic minced
- 1 poblano pepper diced small
- 2 jalapeño peppers diced small
- 1/2 of a green bell pepper diced small
Seasonings:
- 1 tbsp Ground Cumin
- 1/2 tsp Chili powder
- 1/4 tsp Ground cinnamon
- A pinch of ground Nutmeg
- A pinch of ground ginger
- 1/4 tsp Ground thyme
- 2 Bay leaves
- 1 tbsp Italian seasoning
- 1/4 tsp Cayenne pepper
- 1/2 tsp Chicken bullion
- S&P to taste
- All purpose seasoning for chicken
Directions:
- Chop all veggies & place in a bowl
- Heat a skillet on medium heat with 1 tbsp of olive oil. Add vegetables & ground seasonings, sauté until they begin to soften.
- Remove veggies from pan & add to slow cooker.
- Place chicken breast in slow cooker & add chicken broth. Add bay leaf, Italian seasoning, S&P, & chicken bullion to slow cooker.
- Cook on high for 4 hrs.
- After 4 hours, remove chicken & place in a bowl. Shred chicken & add back to slow cooker. Add beans & corn & cook for another 2 hours.
- Serve with toppings of your choice: cilantro, avocado, sour cream, salsa, etc.
