Slow Cooker White Bean Chicken Chili

Somewhere between soup & stew

Tools:


  • Slow cooker
  • Large frying pan 
  • Mixing bowl


Ingredients:


  • 2 chicken breast
  • 32 oz of chicken broth
  • 1 can on cannellini beans
  • 1 can of navy beans
  • 1 cup of corn (I use frozen but canned or fresh is fine as well)
  • Half of a yellow onion diced small
  • 4 cloves of garlic minced 
  • 1 poblano pepper diced small
  • 2 jalapeño peppers diced small
  • 1/2 of a green bell pepper diced small


Seasonings:


  • 1 tbsp Ground Cumin
  • 1/2 tsp Chili powder
  • 1/4 tsp Ground cinnamon
  • A pinch of ground Nutmeg
  • A pinch of ground ginger 
  • 1/4 tsp Ground thyme
  • 2 Bay leaves 
  • 1 tbsp Italian seasoning
  • 1/4 tsp Cayenne pepper 
  • 1/2 tsp Chicken bullion 
  • S&P to taste
  • All purpose seasoning for chicken


Directions:


  1. Chop all veggies & place in a bowl
  2. Heat a skillet on medium heat with 1 tbsp of olive oil. Add vegetables & ground seasonings, sauté until they begin to soften.
  3. Remove veggies from pan & add to slow cooker.
  4. Place chicken breast in slow cooker & add chicken broth. Add bay leaf, Italian seasoning, S&P, & chicken bullion to slow cooker.
  5. Cook on high for 4 hrs.
  6. After 4 hours, remove chicken & place in a bowl. Shred chicken & add back to slow cooker. Add beans & corn & cook for another 2 hours.
  7. Serve with toppings of your choice: cilantro, avocado, sour cream, salsa, etc.
