Cracked Brownie Cookies
Think Brownie in Cookie Form

These are some of the easiest cookies you can make! These cookies are slightly crisp on the outside and fudgy on the inside creating the perfect blend of cooking and brownie. They mix and bake quick and its easy to scale up or down, what more could you ask for! Get the kids involved and play around with the mix-ins. From chocolate chips, white chocolate, to marshmallows! Tools:
-2 mixing bowls
-Hand or stand mixer
-Rubber spatula
-Mixing spoon
Ingredients:
4 oz of semi sweet or bitter sweet chocolate chopped finely
1/2 cup of unsweetened cocoa powder
1/2 cup of butter
2 eggs
1 tsp of vanilla extract
1/2 cup of brown sugar
3/4 cup white sugar
1 cup of AP flour
1 tsp of baking powder
1/4 cup of Andes baking chips
1/4 cup of semi sweet chocolate chips
Directions:
- Pre-heat oven to 325º
- In a bowl sift or mix together flour, cocoa powder and baking soda
- Next, place your cut up semi-sweet in a microwave safe bowl with your butter and microwave in 30 second intervals until melted (be careful not to over heat and stir in between intervals). Once melted, stir in vanilla extract.
- To your melted chocolate add both your white and brown sugar and mix with hand mixer for a few minutes. Then add your eggs one at a time mixing just until combined.
- Next, add dry dry ingredients in 2-3 batches stirring until combined and scraping bowl with spatula.
- At this point you can add your mix-ins. I used a 1/4 cup of Andes baking chips on half the batter and a 1/4 cup of chocolate chips on the other half. You can also leave them as is and bake without mix-ins!
- Scoop to desired size and bake for 5-7 min in a parchment lined baking sheet. Take the pan out and bang on the counter a few times for cracks to form. Place back in oven for a few min and remove while center is still soft. Mine took about 10-12 min* to bake.
- Serve warm & enjoy!
*These cookies spread and bake thin so they do not take long to bake.
