Small Batch Vanilla Cake with Vanilla Frosting
Moist Vanilla Cake!

When you want cake but not too much, this is the recipe for you. It yields 6-8 cupcakes or a standard cake pan. I love to make this recipe because they come out super moist every time & it's the perfect amount for my small family. This can easily be doubled for more and the cake freezes really well!
Tools:
-Stand or hand mixer
-Mixing bowls
-Rubber spatula
-Cupcake pan or cake pan
Ingredients:
-1 cup flour
-2 eggs
-1 teaspoon of baking powder
-Pinch of salt
-3/4 cup of sugar
-1/2 stick of softened butter (4 tablespoons)
-1 teaspoon of vanilla extract
-1/4 cup of vegetable oil
-1/2 cup of sour cream
-1/2 package of vanilla instant pudding (optional)
Frosting:
-1 stick of butter
-2 cups of powdered sugar
-1 tablespoon of vanilla extract
-Splash of milk or cream until desired consistency
Directions for cake:
- Preheat oven to 325°
- Cream butter & sugar for few min until fluffy. Add vanilla then your eggs one at a time and mix on low
- Add oil, sour cream, & pudding to wet mixture
- In another bowl sift together flour, baking powder, and salt
- Add dry ingredients to wet ingredients mixing until combined & fluffy
- Bake on 325° until tooth pick comes out clean
Directions for frosting:
- In mixer add softened butter and mix until creamy
- Add powdered sugar, cream, & vanilla extract and beat for a few minutes on high until light and fluffy
Once cake is completely cooled, frost and enjoy!
