Vanilla White Chocolate Cake Popsicles

Who doesn't love a cake pop? This is a fun one to get the kids involved, rolling the dough and dipping them in chocolate. These have a nice outer shell that crunches as you bite into them and a soft center. These make cute class gifts and are so fun & easy to make. I made mine with a Valentine's Day theme, but you can decorate how you like for any occasion!
Tools:
-Stand or hand mixer
-Mixing bowls
-Cake molds
-Mixing spoon
-Spatula
-Parchment lined baking sheet
Ingredients:
-8X8 cake (View Small Batch Vanilla Cake recipe on my blog for the cake I’m using)
Frosting:
-1 stick of butter
-2 cups of powdered sugar
-1 tablespoon of vanilla extract
-Splash of milk or cream until desired consistency
-Pinch of salt
White chocolate coating:
-2 cups of white chocolate chips
-1-2 teaspoons of coconut oil
-Sprinkles of your choice for decorating
Directions for frosting:
- In mixer add softened butter and mix until creamy
- Add powdered sugar, cream, & vanilla extract and beat for a few minutes on high until light and fluffy
Directions for dough:
- Break cake into small pieces and add to mixer, mix until crumbly
- Add frosting & mix until dough forms
Directions for white chocolate coating:
- Place white chocolate and coconut oil,
in microwave safe bowl & heat for 30 second intervals until melted stirring in between intervals
Assembly:
- Take dough and press into mold. Add stick and let cool in freezer or refrigerator (you want them cold and firm)
- Once firm, dip in white chocolate & lay on parchment lined pan
- Add sprinkles and decoration then allow to set in refrigerator then enjoy
