Iced Lemon Loaf

Sweet, Tangy, & Moist!

Tools:
- Loaf pan
- Micro Plane
- Mixer or Mixing bowl
- Rubber spatula
Ingredients:
Cake:
- 2 eggs
- 1 cup of sugar
- 1 cup of sour cream
- 1/2 cup of Vegetable oil
- Zest of 1 Lemon
- 2 Tbsp of lemon extract
- 1 1/2 Cups AP flour
- 2 tsp baking powder
- 1/4 tsp salt
Glaze:
- 1 cup powdered sugar
- 1-2 Tbsp lemon juice
Directions:
- Preheat oven to 350° F. Spray or grease loaf pan & set aside.
- Sift, flour, baking powder, & salt together & set aside.
- To a mixing bowl, add the eggs, sugar, & sour cream, & whisk until smooth and combined.
- Drizzle in the oil while whisking to combine.
- Add the lemon zest, lemon extract, and whisk to combine.
- Slowly add the dry mixture and stir until just combined, don't over mix! (Lumps are okay!)
- Pour the batter into the loaf pan, & bake for about 50 to 55 minutes, or until a toothpick comes out clean. In the last 10 minutes of baking, tent pan with foil to prevent it from getting too brown.
- Let cake cool in pan on top of a wire rack for at least 30 minutes before taking out of pan
- To a mixing bowl, add the powdered sugar and slowly add in the lemon juice while whisking until smooth and combined & you reach your desired consistency.
- Once the cake is completely cooled, pour glaze over & enjoy!
