Iced Lemon Loaf

Sweet, Tangy, & Moist!

Tools:


  • Loaf pan
  • Micro Plane
  • Mixer or Mixing bowl
  • Rubber spatula


Ingredients:


Cake:


  • 2 eggs
  • 1 cup of sugar
  • 1 cup of sour cream
  • 1/2 cup of Vegetable oil
  • Zest of 1 Lemon
  • 2 Tbsp of lemon extract
  • 1 1/2 Cups AP flour
  • 2 tsp baking powder
  • 1/4 tsp salt


Glaze:


  • 1 cup powdered sugar
  • 1-2 Tbsp lemon juice


Directions:


  1. Preheat oven to 350° F. Spray or grease loaf pan & set aside.
  2. Sift, flour, baking powder, & salt together & set aside.
  3. To a mixing bowl, add the eggs, sugar, & sour cream, & whisk until smooth and combined.
  4. Drizzle in the oil while whisking to combine.
  5. Add the lemon zest, lemon extract, and whisk to combine. 
  6. Slowly add the dry mixture and stir until just combined, don't over mix! (Lumps are okay!)
  7. Pour the batter into the loaf pan, & bake for about 50 to 55 minutes, or until a toothpick comes out clean. In the last 10 minutes of baking, tent pan with foil to prevent it from getting too brown.
  8. Let cake cool in pan on top of a wire rack for at least 30 minutes before taking out of pan
  9. To a mixing bowl, add the powdered sugar and slowly add in the lemon juice while whisking until smooth and combined & you reach your desired consistency. 
  10. Once the cake is completely cooled, pour glaze over & enjoy!
