Lemon snack cakes w/lemon cream cheese & lemon glaze

Full of lemon flavor

Tools:
- Mini cake pan
- Mixing bowls
- Rubber spatula
- Quart bag or piping bag
- Hand mixer or stand mixer
Cake ingredients:
- 1 cup of flour
- 1 egg
- 1/2 stick of butter
- 1/2 cup sour cream
- 1/2 tsp Baking powder
- 1/2 cup of sugar
- Pinch of salt
- 1 tbsp of Lemon extract
Filling:
- 2 oz of softened cream cheese
- 1 tsp of lemon zest
- 1 cup of powdered sugar
Glaze:
- 1/4 cup powdered sugar
- 1 Tsp of Lemon juice
- Splash of cream
Directions:
- Preheat oven to 325°
- Sift dry ingredients together into a bowl & set aside
- Cream butter & sugar. Once fluffy add egg, sour cream, & lemon extract; mix well.
- Add dry ingredients and mix until combined
- Bake on 325° for 15 min or until a toothpick comes out clean
- While cakes are baking, add cream cheese into a bowl & beat until smooth. Add powdered sugar & lemon zest; mix until combined. Add to piping bag for filling the cakes.
- In another bowl mix powdered sugar, lemon juice, & cream until you reach your desired consistency for the glaze.
- Once the cakes are cooled, poke holes in the bottom. Fill the cakes with the cream cheese mixture then dip in the glaze. You can also top the cakes with the cream cheese filling!
