Ciabatta Chicken Sandwich

No Fuss Lunch!

Tools:
- Skillet
- Baking dish
- Baking brush
Ingredients:
- 2 large chicken breast
- 4 ciabatta rolls
- 1 roma tomato
- 2 cups of fresh spinach
- Garlic spread
- Marinated mozzarella cheese balls
- Seasonings of your choice
Directions:
- Cut your ciabatta rolls in half & set aside. Cut your tomato into thin slices. Butterfly your chicken breast (split in half) creating 4 thin breast pieces.
- Heat a tbsp of olive oil in a skillet on medium. Season chicken breasts on both sides to your liking. Once pan is hot, add chicken breast and cook for 3-4 min on both sides or until golden brown.
- Once chicken is fully cooked, remove from pan & set aside to rest.
- Using the same skillet, add your spinach and sauté until wilted down, season with S&P, & remove from pan
- Brush the insides of the ciabatta rolls with the mozzarella oil and place in the same skillet until toasted. Remove the toasted roll and smear on the garlic spread. Turn oven to broil
- Cut the mozzarella balls in half & place on half of the ciabatta roll (top or bottom). Place rolls in pan & broil until cheese is melty. While the rolls are in the broiler, slice chicken breast on a bias.
- Now, we are ready to assemble! Add chicken slices, spinach, & tomatoes on the rolls & serve with chips or french fries for a tasty lunch!
