Ingredients:
5 bone-in chicken thighs
2-3 tablespoons of hot honey
2 tbsp of unsalted butter
1-2 tsp of lemon juice
Seasoning of your choice (all purpose seasoning, garlic powder, paprika, S&P
Directions:
Start with clean dry chicken thighs and season liberally to your liking. Pre heat oven to 350º
Heat a cast iron skillet or oven safe skillet with 1 tablespoon of olive oil (medium heat)
Once hot, add chicken thighs SKIN SIDE down. Let cook for 3-4 min or until golden brown. cook on other side for another 3-4 min.
Cover skillet with foil and place in oven for 15-25 min. Then, remove skillet from oven.
Remove chicken from skillet and add to baking dish, set aside.
Heat your skillet with all drippings and add butter. You want your pan on simmer at this point. Once the butter is melted, add your hot honey; let cook until it reduces by half.
Once the sauce is thickened, add chicken back into the skillet (skin side up) with the honey sauce & let simmer for a few min. Drizzle some sauce on the tops of the chicken thighs. For extra razzle (optional), you can add the skillet back into the oven on broil for just a few min; this ensures a crispy/sticky skin but totally optional!
Server over rice with extra sauce & a side of veggies, enjoy!!!
